Guilt Free Chocolate Chip Muffins

I have always had a huge sweet tooth. Even if I’m not hungry, put chocolate or cookies or muffins in my face and I will eat them. Recently, I’ve been swapping my typical treats with healthier alternatives that are just as tasty!


If you have a sweet tooth like me, these muffins will change your world. They are delicious yet not packed with tons of oil and sugar. Introducing….Banana Chocolate Chip Muffins.Ingredients:

2 cups rolled oats
1 cup Greek yogurt
2 ripe bananas
2 eggs
1/4 cup honey
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 cup mini chocolate chips (or more ๐Ÿ˜‰)
Directions:
-Mix wet ingredients together first.
-Add the wet mixture plus dry ingredients into a food processor until batter is smooth.
-Add chocolate chips and stir.
-Transfer batter into muffin pan using parchment paper lines or butter to avoid sticking.
-Sprinkle more chocolate chips on top of muffins for fun.
-Bake at 375 degrees for 25-30 minutes until the tops of muffins are set.

Turkey Meatloaf Muffins


These turkey meatloaf muffins are not only delicious but they are healthy & can be eaten as a snack (2 in each serving!) or as a meal combined with other foods. Get creative with these. I like to add zucchini but feel free to add any other veggies that you like! Now that I’m thinking about it…sweet peppers would add a nice crunch! ๐Ÿ™‚
Ingredients 
  • 2 lbs ground turkey or chicken
  • 3 egg whites
  • 1 cup quick cooking oats
  • 1/2 tsp ground cumin
  • 1/2 tsp dried thyme
  • 2 tsp dried yellow mustard
  • 2 tsp black pepper
  • 2 tsp chipotle pepper spice (I don’t add this)
  • 1 tsp salt
  • 2 tbsp garlic powder (or 2-3 cloves of fresh garlic)
  • 1 small onion finely chopped
  • 2 celery stalks finely chopped
Additional add-ins (optional)
  • 1/2-1 zucchini shredded
  • 1-2 carrots shredded
  • 1-2 sweet peppers
Directions:
  • Preheat oven to 375 degrees
  • Spray muffin pan with olive oil
  • Mix all your ingredients together in one large bowl
  • Roll the mixture into balls and place in muffin tin.  Muffins should be about the size of racquet balls.
  • Bake for 40 minutes
  • Makes 12 muffins
